Commercial Refrigerator Repair for Reach-In Coolers and Prep Tables

A cooler drifting past 41°F puts the whole line at risk. Call with the reading and we plan a visit around your service.

Built-in stainless refrigerator serviced on site

The first thing we ask about a reach-in cooler is one number, the temperature inside the box. Under the FDA Food Code, cold food has to stay at 41°F or below. A reach-in reading 45°F at noon is already trouble for the food and for the next inspection.

From Parma we drive out to restaurants and cafes whose reach-ins and prep tables are struggling, and to glass-door display coolers as well. These boxes work a lot harder than the fridge in your house. The door opens all shift, and the condenser sucks in kitchen air loaded with grease and flour.

What the thermometer is telling you

Stand a thermometer in a glass of water on the middle shelf and give it ten minutes. Then check the reading against the three below.

Don't go by the display on the front for this. It's reading the air around one probe, and air swings warm and cold a lot faster than a hotel pan of soup does.

36 to 38°FHealthy range

That's where most cooks want it. You've got a cushion, so somebody holding the door open in the rush won't push the food past 41.

41°F +Over the limit

Pull the dairy and the cut produce first and put them somewhere cold. Then call. A slow creep like this is usually airflow or a filthy condenser. It's rarely the compressor.

32°FFreezing product

Lettuce frozen against the back wall? Then the thermostat is stuck or the probe is lying. The cooler keeps running because it never believes it's cold enough.

Where a reach-in loses its cold

Greasy condenser coil

Grease in the air settles on the coil, then dust glues itself on top. Honestly, in any kitchen with a fryer this is what we'd look at first. The compressor ends up running hot all day, so we clean the coil and test the fan behind it on the same visit.

Door that will not seal

Torn gaskets and saggy hinges leak warm air every time somebody reaches in for a pan. Prep tables have their own version, a lid over the pans that won't sit flat anymore.

Iced evaporator

No defrost, and frost slowly packs the coil inside the cabinet. Eventually the fan is just blowing at a block of ice. The box loses a degree, then another.

Water on the bottom shelf

There's a skinny drain tube under the evaporator. Once it clogs or freezes, the water drips onto your bottom shelf instead of the pan.

Compressor clicks off

Click, short hum, quiet. Bad start parts do that, and so does a compressor that overheated and shut itself off. We sort out which when we're standing in front of it.

Control showing the wrong number

Digital controls go by a probe sitting in the air stream. When that probe fails, the screen can show a nice cold number while the food is warming up.

Cooler failing in the middle of service

If the number keeps climbing, don't wait for the end of the night. Move the touchiest food to another cooler and keep the bad one shut. Then call us with the model number off the plate inside the door frame.

It helps to clear some space around the unit before we get there. On most reach-ins the condenser is up top or behind the bottom grille, and we need to get a hand in.

Refrigerators we service in commercial kitchens

  • Reach-in coolers
  • Sandwich and pizza prep tables
  • Undercounter refrigerators
  • Glass-door merchandisers
  • Bar coolers

All of these are self-contained, with the compressor built into the same cabinet as the food. If the dish station is the problem, go to commercial dishwasher repair. For the cooking line, see commercial oven and range repair.

Every kind of business unit we handle is listed on commercial appliance repair. Bar coolers deserve a note of their own. They sit low and breathe floor dust, and their condenser often ends up pressed against a wall with no room to vent. Pull one out a few inches and its run time can drop noticeably.

Is there commercial refrigerator repair near me?

If your restaurant is no more than about 50 miles from Parma, we come to you. That reaches Cleveland and Akron, and it takes in Lorain and Lake counties too.

Why is my reach-in cooler not cooling?

Start with the condenser coil. In a kitchen it clogs with grease and dust, and the compressor overheats. An iced evaporator or a dead fan motor inside the cabinet are the next suspects, and both need a technician.

What temperature should a commercial refrigerator hold?

The FDA Food Code sets 41°F or colder for cold holding, and Ohio's food rules are built on it. Many kitchens aim for 36 to 38°F so a busy hour doesn't push them over.

Why is my prep table warm on top but cold below?

The pan rail sits in open air and relies on cold air rising from the cabinet. A lid left up leaves the top warm, and so do pans stacked above the rail line. If the lid stays down and the pans still warm up, call us.

Can you repair a reach-in that leaks water inside?

Yes. Usually the evaporator drain line has plugged or frozen, and sometimes a worn gasket lets humid air in. We clear the drain and find out why it froze.

How often should the condenser coil on a reach-in be cleaned?

Near a fryer or a grill, once a month is a sensible habit. Elsewhere in the kitchen every three months usually keeps it clear. Brush along the fins, never across them. Then vacuum the loose dust. A coil matted with grease is something we clean during a visit.

Why does my glass-door cooler fog up?

Fog on the outside comes from humid summer air meeting cold glass. Inside fog that won't clear points to a door heater that failed or a gasket letting warm air in. Wipe the glass and watch it for an hour. If the fog comes back, call us.

What should I tell you when I call about a commercial cooler?

The model and serial number from the data plate come first. Then the temperature you measured and roughly when it started climbing.

Why does my reach-in cooler keep icing up?

Ice on the evaporator usually means the defrost cycle stopped, so the frost never melts off. A door left ajar feeds it moisture. We test the defrost heater and its control before replacing anything.

Do you offer commercial refrigerator repair service on Sunday?

Yes. Technicians work Sunday from 7 am to 11 pm, the same as weekdays. No technician works Saturday, though a request sent that day is answered.

Should I repair or replace an old reach-in?

Fans and gaskets are almost always worth repairing, and so are most controls. A failed compressor on an older cooler can cost nearly as much as a new one, and you hear that price before any work starts.
